Hormone Balancing Vegetable Soup

We like ours with sourdough and grilled chicken on the side. This recipe couldn’t be easier! Roast, season, blend, add chicken stock and coconut milk, blend some more!


Ingredients:

  • 8 Roma Tomatoes, halved

  • 6 Whole Carrots

  • 2 Zucchini, sliced

  • 2 Squash, sliced

  • 1 Onion, quartered

  • 3 Bell Peppers, halved

  • 2 Whole Garlics

  • A 14oz Can Coconut Milk

  • 2 Cups of Chicken Broth

  • Optional: balsamic drizzle for topping


Roast at 350° for about 45 minutes or until soft. Place in blender (squeeze out garlic and discard shell). After it’s blended down add chicken broth and milk and blend until smooth.
